Ingredients
Wet
1/2 c. peanut butter
1/4 c. maple syrup
1 ripe banana
1 flax egg
1 tsp vanilla
1/2 c. cooked quinoa
2 Tbsp. chia seeds
Dry
1 c. quick oats
1/2 c. spelt (or can sub whole wheat flour)
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1 scoop of your favorite protein
Optional
1/4 c. chocolate chips
1 tsp. coconut oil
Instructions
1.Preheat oven to 350F and spray a 8×8 non-stick baking pan with cooking spray.
2.Make the flax egg and set aside.(*Flax egg = 1.5 Tbsp. flax meal mixed with 3 Tbsp. water)
3.In a large bowl add in the peanut butter, maple syrup, mashed banana, flax egg and vanilla. Stir well until nice and fluffy. Set aside.
4.In a medium bowl, mix all the dry ingredients together.
5.Add in the dry ingredients to the wet and stir well to combine.
6.Add in the cooked quinoa and chia seeds, mix to combine.
7.Pour the batter into glass baking pan and bake for about 25-30 minutes.
8.Once done set aside to cool.
For the Chocolate
9.Microwave chips and coconut oil in a small bowl, stirring as needed. (Mine took about 1 minute and 30 seconds but this will depend on the temp. of your microwave)
10.Drizzle on bars and enjoy!
